Natural Split Blonde Prune Olive - Naturally Prepared and Fermented
There are large Blonde/Green olives that are fermented in brine. The carving of the fruit contributes to the faster completion of the debittering and the fermentation, but also to the development of particular organoleptic characteristics (flavor aromas etc).
They have medium salinity (about 6%), rich fruity taste and light bitterness.
These olives stand out for their size (a single olive can reach a weight of 30gr), for their Natural Method of Preparation and for their special "personality" in appearance, texture and taste.
Natural are called the olives for the preparation of which no Alkaline solutions (caustic soda-potash) have been used, while the ones in which they have been used are called processed.
Natural olives take months to debitter, while with the use of caustic soda the olives debitter within a few hours.
