Sun-dried Tomatoes
Sun-dried tomatoes are made of ripe tomatoes dried under the sun until they lose most of their water content. A distinguished and very tasty version, produced by “anhydres” tomatoes (that is tomatoes grown without artificial watering), can easily be found on many greek islands.
Sun-dried tomatoes keep their nutritional values after the drying and they are rich in lycopene, an antioxidant factor that brings health and help with good heart functionality. Sun-dried tomatoes are also high in many useful elements like vitamins A, B, B6 and K, lutein, carotene, choline, pantothenic acid, niacin, riboflavin, thiamine and of course vitamin C. They contain a strong quantity of fiber that help the digestive system and as they are sun-dryed, the proteins climb up to 14%.
Sun-dried tomatoes are used in everyday diet in many different ways. They revive sauces and salads, give taste to the pasta, lift off the taste of meat, and even become a delicious ”meze” when put together with some extra virgin olive oil, garlic and oregano.
