Capers is one of the gourmet delights of the Mediterranean. Greek capers grow by itself in nature, while the varieties from other mediterranean areas are industrially grown.
By the end of spring and beginning of summer, capers show up in all greek islands. You can see them everywhere, breaking out from rocks and ancient walls, blossoming along the country roads.
Capers’ spicy taste emerges only after it is turned to pickles, when its distinctive smell comes forward.
Capers is considered to be an appetizer. It is used to flavor olive oil, vinegar or butter, or it is added in cheese.
