Grape Molasses (Petimezi)

MolassesGrape Molasses (Petimezi) is a thick syrup, obtained by boiling the grape juice (must).

The grape juice is boiled for several hours, until it gets dark and syrupy. This way it can be preserved for a long time. Along with the honey was one of the ancient sweeteners and was used as a substitute for sugar. Its flavor is not just sweet, but much more complex, with a slightly bitter aftertaste.

Petimezi is used in baking as a sweetener (cookies, muffins, etc.), as well as in cooking, sauces and salads.
