This extra virgin olive oil has very low acidity (0.2-0.6%) is obtained directly from olives and solely by mechanical means.
Harvesting is done by hand in November, so that the fruit will not be injured.
The olive oil (designated as PDO Sitia) is extracted on the same day with cold pressing (T <27oC), the olives are transported to the oil mill within 4-8 hours.
