Pickles (Toursi)
Pickled Vegetables prepared by the traditional recipe of the Balkans and the Middle East, Toursi (Greek: τουρσί toursi; Persian/Arabic: ترشى torshi; Turkish: turşu) is an essential element of the local cuisine. The word torshi comes from the Persian word torsh, which means 'sour'.
Carrots, cabbages, cucumbers, peppers and olives are the favourite toursies of the greek families. Excellent "meze" to go with drinks like ouzo, raki, tsipouro.
