Organic Pine HoneyThe organic Pine Honey “FASSILIS” is collected in the pine forests of Arcadia in Peloponnese and in Eboea at an altitude ranging from 800m-1300m during Spring (April-May) and Autumn (September-October). 

The spring pine honey is lighter (as far as concerns its color), clearer and more aromatic than the honey that is produced in autumn. The pine honey crystallizes slowly enough because of its low content in glucose (>18 months).

Its great nutritional value is based on the various substances that compose it. The most important of them are the trace elements, found at high concentration, that classify greek pine honey as honey with higher nutritional value.

After harvesting, the honey is packed into glass jars in the modern facilities of the Fasilis family. The whole process does not exceed one month from the time of harvest. Honey is then stored in dark and dry spaces, at low temperature, ready to be released for consumption.

CRYSTALLIZATION >18 months   Keep in a cool, dry, dark and odorless place (< 15°C for long storage period). The pine honey crystallizes pretty hard. The crystallization of the honey is a natural process that depends only on its plant origin. It returns to its original state with moderate heat. (bain-marie)
