Tzatziki

Ingredients 

250gr  strained yogurt

cloves of garlic ( or more, depends on ones taste)

1 pinch Sea Salt

Fresh dill

1 tablespoon of vinegar

3 table spoons  extra virgin olive oil

1 cucumberΤζατζίκι


Method

Remove the cucumber's skin, split and remove the little seeds. Use a cheese grater and grate the cucumber, then leave to drain very well. 

In a bowl, whisk together the yogurt, garlic, chopped dill, vinegar, olive oil and salt until blended. Finally, whisk in the drained cucumber. Your greek traditional tzatziki is ready!!

Keep your tzatziki in the refrigerator and always serve cold. Some drops of extra virgin olive oil, black olives and a  sprig of fresh dill is all you need to decorate your tzatziki. 


Chicken bites with petimezi (grape molasses)

 

Another great "meze" by chef Nikos. Dare and enjoy !

Ingredients Chicken bites with petimezi (grape molasses)

4 pieces of chicken fillet

One onion

cloves of garlic or a teaspoon of garlic pulp

Some extra virgin olive oil

Sea Salt and ground pepper

50ml of METAXA 

tablespoons of sesame grains

tablespoons of grape molasses (petimezi)


Method

Chop the chicken fillets to small bites.

Put a large pan on strong heat and saute the chicken with olive oil, sliced onion and garlic.

Deglaze the pan with METAXA and let simmer for a while.

Lower the heat and bring in the sesame grains and the petimezi.

Stir gentlyuntil the chicken is covered and coloured with petimezi and sesame. 

Serve and enjoy !
